Tea Leaves Tell Big Flavor Tale

Recent research revealed that the latest Boston Tea Party is taking place in the kitchen for some innovative cooks. Interviews conducted* with more than 1,000 home cooks indicated that only one out of nine adults have used tea leaves or brewed tea in cooking. But, once these cooks discover the flavor that tea can bring to so many recipes, they're sold on its benefits. Nearly one out of four surveyed who cooked with tea leaves or brewed tea commonly use them as a key flavor ingredient in salad dressing (24 percent), in a dessert or as a meat rub (17 percent each) or in an entree (16 percent).

It's a secret only some top chefs have used. Until now. "From tea-smoked salmon fillet, to herb-tea infused rice dishes, to green-tea flavored ice-cream or sorbet, premium teas are really a secret weapon to adding phenomenal flavor and depth to a variety of dishes," said Thomas Griffiths, certified master chef and professor in nutrition and culinary arts at the Culinary Institute of America's awardwinning restaurant, St. Andrew's Cafe. "In addition to the extraordinary flavor tea can add to a dish, it is a nutritionally sound way to go, as Americans look for ways to eat healthier without sacrificing taste."
