Summary
Heat a wok over high heat. Add half of the oil and when hot and nearly smoking, add half of the following: green onions, garlic, ginger, and red peppers flakes and cook, stirring, for 10 to 15 seconds. Add the chicken and stir-fry until turning opaque and nearly cooked through, 3 to 4 minutes. Remove the cooked chicken to a plate. Heat the remaining oil, add the other half of the aromatics and cook, stirring, for 10 to 15 seconds. Add the vegetables starting with items that will take longer (broccoli, carrot), cook for 2-3 minutes, then add the more delicate veggies (snow peas, peppers, bean sprouts) and stir-fry for an additional 2 minutes. Add the cooked chicken and the sauce. Stir and toss, cooking until the sauce is thick, about 2 minutes. Remove the chicken and vegetables from the pan.
