Summary


I spent the first, full day in Bahia with my new American friends and personal tour guides, Kevin and Alex. We tooled around Pelhourino shopping and siteseeing and absorbing all of the African history of the city. Since they were on their last day of vacation, they hipped me to the best place to have their favorite dish so I could carry the torch. Using their broken Portuguese, they ordered a dish called moqueca. It's a fish stew with a base of chile and coconut milk. You can use whatever fish or seafood you choose. It's so packed with flavor that you could just sip on the liquid and not even touch the fish.

Heat a sauce pan over medium-high heat. Add the olive oil, then the shrimp and marinade mixture. Stir and add tomatoes, cilantro, tomato paste and black pepper to taste. Add thin coconut milk and cook over low heat until the shrimp are cooked. Add the thick coconut milk and dende oil. Continue cooking for another 5 minutes.
