Summary


If you don't have fresh herbs, you can substitute the dried variety, using two-thirds less. For example, if a recipe calls for 3 tablespoons chopped fresh herb, then use 1 tablespoon dried herb.

Spread half of the fennel slices and the fronds in the pan, making a bed for the fish. Close the fish back up, place in the pan, and top with the remaining fennel slices and fronds. Drizzle the remaining oil over the fish.

Place the tomatoes in a large cast iron skillet or heavy roasting pan. In a small bowl or cup combine the oil, garlic, basil, cinnamon, salt and black pepper. Drizzle the mixture all over the tomatoes, mixing well with a large spoon.
